Stuffed Zucchini

When I was in Elk Grove for Father's Day, Aunt Tami gifted me her humongous zucchini from her garden. Dad suggested I empty out the inside seeds, roast it and then stuff it. That's exactly what I did and boy was it delicious!! 
The huge zucchini, seeded and covered in EVOO, S & P, cumin, chili powder and chopped garlic.

I stuffed it with quinoa, fresh tomatoes, cilantro, corn onions, garlic, cumin & chili powder.

Once roasted, I stuffed the quinoa mixture into the zucchini.

Looks good, right?

Topped with a little green onion and voila!
