Day 3: Rockies Baseball Game and Watercourse

Day 3 started off at a run as usual. We went to the 9AM step class and then a stop at Target and a few other errands. Robyn then made some fried eggs and toast for her and mom while I enjoyed some left over veggie salads. Around 12:45 I drove us nearer to the ball park and we walked the 20 minute distance to the Coors field in downtown Denver. Our seats were on the opposite side of the stadium, but once we found them we liked them. The sun was to our backs and we had enough sunscreen, sunglasses and hats to keep us cool, along with water bottles, peanuts, beer and even a spray bottle to keep us cool in the hotter moments. The shade eventually took over our section as a harsh wind rose up and had us questioning whether a down pour would be in the future. Luckily it held off as we watched the Colorado Rockies loose to the Kansas City Royals 16-8, an extremely high-scoring game. It was a very fun game and we had a nice family sitting next to us cracking jokes and cheering along until the very end (yep, we stayed till the end of the 9th inning, the weather and game were that great!). Then home for a rest, it being so hot we melted into my apartment. Robyn and I played some Monopoly and Mom napped. Before 8 we made our way to Watercourse Foods for our evening reservations. I had some other options for activities to do but after the hot, long day we decided to keep it simple and just enjoy a wonderful meal together.

ROCKIES GAME!! 

There was this odd marketing event going on to get people to go to Rapid City, South Dakota to visit Mt. Rushmore. There were four Mt. Rushmore statue-esque people walking around the stadium getting people excited, dancing around, etc. Mom wanted a picture with Teddy so we grabbed one during a slower inning. 

With enough preparation (see hat, glasses and beverages), even Mom can enjoy a baseball game in 96 degree heat a mile high up!

Nope! It's the baseball stadium!!

After a little nap and refresher, feeling good and ready for some dinner!

WATERCOURSE FOODS

Hydration station: black lager, iced chai herbal blend (with loose leaf pitcher) and light lager.

THE GRINDER
Shaved seitan, swiss cheese, mushrooms, onions, and peppers stuffed into a baguette with avacado and served with au jus.


SWEET POTATO AND BLACK BEAN TACOS
Three tacos full of marinated sweet potatoes, black bean, peppers and onions and topped with cilantro lime slaw. Served with avocado, jack/cheddar blend, and homemade salsa.


CHEF'S SPECIAL
Bean polenta with roasted corn and peppers, sauteed kale, sliced tofu covered in BBQ sauce. 
With a kick, I LOVE BBQ SAUCE!!!

After day 3: a good and busy vacation!

Who wouldn't?! Super chocolatey cake with a coconut-based vegan vanilla ice cream from an ice cream shop on Broadway (Sweet Action). Robyn and I finished that sucker off, for better or worse!

Pensive thoughts on cake

Who us? Did WE just finish off that cake? Maybe we shouldn't have.... nah, never! :)

I love my family, right? Hahaha JUST KIDDING!! Of course, so much fun!!!
