Work party mumbo jumbo



Last week, CIHAD (Colorado "I Have a Dream" Foundation--the non-profit I work for) staff had a happy hour/staff bonding event at a local bar. We had some light hors d'oeuvres that no one was able to finish. Being the resourceful girls we are, Britney and I grabbed all the leftovers and there were A LOT, and took them home. They sat in our fridge for a week so today I decided to do something with them. I made some quinoa and steamed the broccoli. Then I put some oil in a pan, added some green onion and sauteed. Add quinoa and warm it up again. Then stir in some cheesy sauce (yes, not vegan but it was going to be thrown away otherwise...). Cut up steamed broccoli and add. Stir all together with some salt and pepper. Voila! Work party mumbo jumbo ready for your enjoyment, or mine actually!

Ingredients:

  • oil
  • chopped green onion
  • 1 cup cooked quinoa
  • broccoli fleurettes
  • fresh tomato salsa
  • cheesy sauce
  • salt and pepper
Put all ingredients together, heat up, stir around and serve. Enjoy!
