13 Bean Soup


"Bob's Red Mill" 13 Bean Soup

Ingredients

  • soup mix
  • one yellow onion, chopped
  • 2 carrots, chopped
  • celery stalks, chopped
  • 1, 15-oz can tomato sauce
  • 1/2 teaspoon to 1 Tablespoon chili powder, depending on preference
  • 2 cloves of garlic
Directions
  • Wash 2 cups "Bob's Red Mill Soup Mix" then soak overnight.
  • In morning, drain, rinse and bring 2-1/2 qts. water to boil with the beans and a ham hock (obviously I didn't include ham hock!). 
  • Reduce heat and simmer 3 to 3-1/2 hours. 
  • Add 1 cup copped onion, tomato sauce, 1-1/2 tsp to 1 Tbsp chili powder, according to preference, and garlic. 
  • Simmer 30 minutes.
  • Makes about 8-10 servings.
