I had some left over cabbage and tofu sitting in the fridge. I thought about one of my old favorites: cabbage and bacon pasta. Well, I didn't really make a tofu and cabbage pasta, but I did saute the cabbage with red onion until they were both cooked. Then I added in some chopped tofu. Results? Very similar to all the goodies in that beloved pasta without the pasta and a switcheroo of tofu for bacon.
Ingredients
- 1/2 head green cabbage
- 1/2 package firm tofu
- 1 red onion
- EVOO
- salt and pepper
Saute together and enjoy!!
