Sour Creme Oatmeal Pancakes!


 Tuesday we had a snow day and I couldn't make it to the gym because of the weather and snowy conditions. I decided instead to make a really great breakfast/brunch for me and Britney. She had two tubs of sour creme in our fridge and I knew they were just going to grow old and be thrown away. I decided to save them and use them in something yummy. I found a recipe for pancakes with sour creme and oats. Man they were tasty! Plus Britney had some leftover blueberry syrup from when her family came and visited Vail a week ago, so we got to enjoy the pancakes with that super sweet syrup! WOW they were GREAT!!

Oatmeal Pancakes

2 cups rolled oats
2 cups buttermilk (Substitute Sour Cream or Yogurt)
2 eggs--I used the vegan substitute for eggs
1/4 cup butter, melted
1/2 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt


Combine oats and buttermilk. Refrigerate overnight. (I used sour creme and didn't refrigerate overnight--they turned out just great I thought without doing this step).

Add two eggs. Add melted and cooled butter.

Mix in separate bowl: Flour, sugar, baking powder, baking soda, cinnamon and salt.

Stir flour mixture into oat mixture until moist.

Preheat griddle and then dollop about 1/4 c of batter for each pancake.

The original Oatmeal Pancake recipe calls for buttermilk, which I was out of, so I used sour cream.  Buttermilk, Sour Cream, Plain Yogurt - I use them interchangeably in all my baking.

After mixing up the batter I thinned it out with a little milk.



Wednesday night we were hanging out after work, after dinner, and decided to have some fun playing SLAM, my new Scrabble card game I received for Christmas. This is the word that Britney decided to start with :) We also had a nice big bowl of corn flakes, as our dessert, and hot chocolate. A nice wintery treat and some good ol' fashion fun!
