I was cooking up a storm today, even in the 90 degree heat! I had stuff to use up in the fridge and needed food for this week. I got a lot done and I think some pretty delicious meals too. I didn't use any recipes today, though, because I had such a mix of ingredients and no time to properly plan meals. Here's a brief overview of what I made:
Lentil, tomato, broccoli, edamame and corn salad in homemade ginger, garlic, EVOO and lemon dressing.
Orzo, beet greens, meatless sausage in tomato sauce with lots of ginger, onions, basil, vegan cheese, and a few jalapenos.
Broccoli stalk salad with kidney beans in a dressing of fresh garlic, red chili flakes, rice wine vinegar and sesame oil.
Hummus-like dip with garbanzo beans, black eyed peas, tofu, garlic, lemon, EVOO, tamari, and S & P.
