MEDITERRANEAN CRUNCH SALAD
Serves 4
A quick and easy salad featuring the bold flavors of the Mediterranean.
**I ended up making this into a warm dish since I wasn't sure how good some of my veggies still were. I roasted the garbanzos, zucchini, red bell peppers, onion, garlic and salt and pepper. I sauteed the spinach with garlic separately and roasted the broccoli with chili powder, oil, salt and pepper.**
Ingredients
1 (15-ounce) can no salt-added garbanzo beans
1 cucumber, chopped
1 cup chopped broccoli florets
1 cup grape tomatoes, halved
1 cup finely sliced kale
1/2 cup finely chopped red onion
2 tablespoons finely chopped Kalamata olives
3 tablespoons red wine vinegar
1 small garlic clove, minced
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1 cucumber, chopped
1 cup chopped broccoli florets
1 cup grape tomatoes, halved
1 cup finely sliced kale
1/2 cup finely chopped red onion
2 tablespoons finely chopped Kalamata olives

I also made some tasty broccoli and spinach as side dishes!
So good with some chili pepper, S & P!!! My favorite done mom's way! :)
And of course some garlicy spinach!
