This soup was made from one of the packages of bean soup that mom gave me before I moved to Colorado, back in August! I guess when I got here it was too warm to be eating lots of soup so I'm only now breaking into the store stock she got me. I decided to get a jump start on the week by making this soup for Monday night. I also prepped some veggies by chopping lots of onion (3 to be in fact) and garlic (about 2 heads!) so that when I cook during the week I don't have to do as much chopping!
